Salmon Croquettes, also known as Salmon Patties, but my Dad always liked to make them sound like a fancy dish and re-named them Salmon Croquettes, which he pronounced with a British accent since he thought for sure this was something served at the Queen’s house. He was a hoot y’all!

Patties or Croquettes, this recipe is still a staple in our household. It’s so simple to make and most of the ingredients are shelf stable, so you can stock extra and always have them on hand. 

Ingredients:

Makes 8 servings 

  • (3) 5oz cans of salmon
  • (1) 16oz can of pumpkin
  • 2 large eggs
  • 1.5 cups almond meal
  • 2 teaspoon parsley 
  • 2 green onions
  • 1 teaspoon hot pepper sauce (like Tobasco, Sriracha or Crystal)
  • ½ teaspoon paprika

Directions:

Preheat the oven to 425. Place parchment paper on a flat baking sheet. 

In a large bowl, mix all of the ingredients together thoroughly. Using your hands, create the patties. The size of the patties is up to you – I like to do 2 per serving, which would make 16 patties total. 

Once the patties are done and placed on the baking sheet, put them in the oven and bake for 15 minutes, then flip and cook for an additional 15 or until they are to desired doneness. 

Serving Suggestions: Serve with a small salad or some veggies. These are also enjoyable with some chipotle mayo, honey mustard or other dipping sauce of your choice.
