Mango-Avocado Salsa

Coach Beth recently got inspired by a recipe she found from Fitness Celeb Holly Baxter and had to try it! She made a small addition by adding the orange bell pepper for some added sweetness and color and then served it over a blackened halibut – YUM! She had plenty salsa  leftover for the week and was able to spread the love and put it on her chicken and jasmine rice one day and on a mixed greens chicken salad another! What we love about this delicious salsa is that it can be used in so many dishes!

 

Ingredients:

  • 1 avocado, chopped
  • ½ fresh mango, chopped
  • ⅓ red onion, chopped
  • ½ green bell pepper, chopped
  • ½ orange bell pepper, chopped
  • ½ tsp salt
  • 1 lemon, juiced
  • 2 tbsp fresh Cilantro, chopped 
  • Red pepper flakes to taste, optional

 

Directions:

Add all ingredients to a bowl and mix! Serve with tortilla chips, over freshly cooked chicken or fish, in a salad or whatever your heart desires! 

 

Pro tip: Use within 3 days of making. After the third day in the fridge it becomes mushy and begins to turn.
