
We’re gettin’ fancy this week with a yummy London Broil Recipe! This recipe can be served with a side of rice and some veggies to round out a solid balanced meal.
NOTE: the top round will need to marinate for at least 6 hours and overnight is even better.

Ingredients:

- 1.5 lbs lean top round roast
- ½ cup balsamic vinegar
- 2 Tablespoons brown sugar
- 1 Tablespoon extra-virgin olive oil
- ½ teaspoon dried parsley
- ¼ teaspoon ground black pepper
- ¼ teaspoon onion powder
Directions:
Using a sharp knife, score the roast diagonally about ¼” deep. Repeat in the other direction creating diamond scores in the roast. Do this on both sides of the roast
In a large ziploc bag, combine the rest of the ingredients. Add the beef to the bag and seal. Marinate in the fridge for at least 6 hours (overnight is even better).
When you’re ready to cook the roast, preheat the broiler and adjust the oven rack to the highest position.
Place the roast on a broiler pan and discard the marinade.
Broil the roast for 6 minutes on each side or until a meat thermometer reads 160℉ for medium doneness. The outside should be crusty with the inside slightly pink.
Remove from the oven and transfer to a cutting board. Tent the roast with foil and allow to rest for 10 minutes before slicing.
To serve, cut thin slices against the grain.
