This is a flavorful family favorite in coach Emily’s house! She also enjoys making it with ground lamb, but in an effort to keep the fat count down, tends to make it with ground bison or a lean ground beef more often, so we’ve gone that route for the sake of this recipe. But, as always, this simply serves as inspiration and you should feel free to spruce it up as you wish!

Ingredients

Makes 4 servings

  • 1lb Ground Bison
  • 1- 2.5oz can sliced black olives- drained
  • 1- 14oz can of artichoke hearts- drained
  • Spices to taste- oregano, basil, onion powder, garlic powder, salt & pepper
  • 2 cups cooked jasmine rice 

Directions

Crumble bison into a nonstick skillet, generously add spices to taste and cook on med-high heat until browned. Turn off heat, add olives and artichokes. Stir to combine with the bison in the pan. 

Serve over rice and enjoy!

Optional additions: add feta cheese crumbles and/or serve with a side of pita bread.
