
Gluten Free, Vegan & Delicious Fudgy Brownies made with…Black Beans?!?!

Fudgy Black Bean Brownies
Ingredients
Makes 12
- 1 15-oz can black beans, drained and rinsed very well
- 2 tbsp cocoa powder
- 1/2 cup quick oats*
- 1/4 tsp salt
- 1/3 cup pure maple syrup (or honey)**
- 1/4 cup coconut oil
- 2 tsp pure vanilla extract
- 1/2 tsp baking powder
- 1/2 cup to 2/3 cup chocolate chips (choose vegan chocolate chips to keep with the vegan vibe)
Directions
- Preheat oven to 350 F
- Combine all ingredients, except chocolate chips, in a food processor, and blend until smooth…REALLY smooth!
- Stir in the chocolate chips.
- Pour the mixture into an 8x8in greased pan
- Cook for 15-18 minutes. Let cool for at least 10 minutes before cutting into them.
