Gluten Free, Vegan & Delicious Fudgy Brownies made with…Black Beans?!?!

Yup, you read that right, black beans! And they are SUPER delicous!

Fudgy Black Bean Brownies


Makes 12

  • 1 15-oz can black beans, drained and rinsed very well
  • 2 tbsp cocoa powder 
  • 1/2 cup quick oats*
  • 1/4 tsp salt
  • 1/3 cup pure maple syrup (or honey)**
  • 1/4 cup coconut oil 
  • 2 tsp pure vanilla extract
  • 1/2 tsp baking powder
  • 1/2 cup to 2/3 cup chocolate chips (choose vegan chocolate chips to keep with the vegan vibe)


  1. Preheat oven to 350 F
  2. Combine all ingredients, except chocolate chips, in a food processor, and blend until smooth…REALLY smooth!
  3. Stir in the chocolate chips.
  4. Pour the mixture into an 8x8in greased pan
  5. Cook for 15-18 minutes. Let cool for at least 10 minutes before cutting into them. 
  6. TIP: if still a little soft/undercooked, placing them in the fridge overnight will


  •  *Oats, for the most part,  are packaged with other products causing cross contamination, so those with celiac or severe allergies need to make sure to purchase certified gluten free quick oats.
  • **Reduce the amount of sugar and carbs by substituting all or part of the maple syrup with stevia or other low calorie sweetener.
