This fresh and delicious salad is perfect for the upcoming hot summer months. You can make a big batch and serve it up cold while your out on the lake, enjoying a summer picnic or just hanging at home! It’s a really good “leftovers” dish.

Ingredients:

4 servings

  1. 1lb boneless skinless chicken breast- cooked & shredded
  2. 200g Quinoa (cooked weight)
  3. 120g Mixed Greens 
  4. 200g Cucumber – diced
  5. 200g Roasted Red Bell Peppers – sliced or diced
  6. 200g Cherry tomatoes – halved
  7. 6-10 mint leaves
  8. 1 Lemon – juiced
  9. 80ml – low calorie honey mustard dressing

Directions:

Start by cooking up the quinoa per the package instructions. 

While that is cooking, combine the mixed salad greens, diced cucumber, roasted red peppers, cherry tomatoes & mint leaves together in a large bowl. 

Add shredded chicken, cooked quinoa, lemon juice & honey mustard to the bowl of salad. Mix it all up and serve!
